Israel has a worldwide reputation for agricultural accomplishments. While this segment of the country’s economy has known its highs and lows, the dairy industry has been consistent in its achievements, turning it into an agricultural pillar and the largest industry of its kind in the Middle East. Today, a country that started out with barely a cow to its name has the world’s largest selection of soft, spreadable white cheeses as well as a wide array of distinctive dairy goods. The success is remarkable considering the heat, humidity, limited land and water resources, and several veterinary issues that had to be overcome.
